Abstract
The Ordinance defines at the outset its scope of application. Article 2 contains a definition clause relating to various terms therein employed, such as "minced meat", "third country", "trade", "processing plants", etc. Article 3 regulates the processing and trade of minced meat and other meat products in general, and article 4 deals with the same issue referred only to Austria. The owner of a meat producing plant must comply with the prescriptions set out in this Ordinance. Therefore, the person entitled has to set up a HACCP-system (Hazard Analysis Critical Control Point System). Names of authorized plants by the local authorities will have to be published in the Gazette of Veterinarians. Finally, the Ordinance specifies penalties in case of violation. The Ordinance consists of 9 articles and 1 Annex laying down special hygienic requirements for meat processing plants. The identification, marking and labelling, as well as wrapping, packing, storage and transportation are also dealt with.
