Abstract
This Law provides for Sanitary Standards and simplified and differentiated treatment for the production, processing and trade of edible artisanal products of animal, vegetable and micro-organism or fungus origin, and micro-agro-industry in the State of Alagoas. People responsible for the production, processing and marketing of edible products, in artisanal form are legally and judicially liable for public health if there is proof of omission or negligence on their part with regard to hygiene, the addition of chemical or biological products or improper processing, packaging, conservation, transport and marketing practices. The public authorities, through the competent health bodies are responsible for the surveillance, inspection and sanitary control of artisanal products, as well as the guidance and training of technicians and assistants, as regulated in the regulations of this Law. All establishments producing, processing and trade artisanal food of animal or vegetable origin and micro-organisms or fungi located within the State must be registered with the competent health body, in accordance with the regulations of this Law.
