This Norm, consisting of 8 articles, makes compulsory for the operation of industrial plants and warehouses of animal origin products registered in the State Inspection Service, SIE-Idaf, of the State of Espírito Santo the establishment and the implementation of the Self-Control Programmes. The responsibility for the implementation of the Self-Control Programmes belongs to the industrial plants and must follow specific technical rules. The written plan of the Self-Control Programmes must be approved, dated and signed by the legal adviser and the technical responsible of the plant, who will become responsible for its implementation. The written plan will be composed of Manual of Good Manufacturing Practices and Self-Control Programmes; In addition, it establishes training and qualification of personnel; Conduct of food handling operations procedures; monitoring and verification of procedures and their efficiency; the review of corrective and preventive actions in situations of deviations and technological changes in industrial processes. The essential hygiene requirements and procedures to be developed and applied in registered industrial plants and in the registration process will be based on production processes structured in the Manual of Good Manufacturing Practices and specific Self - Control Programmes (PA).
