Abstract
This Decree establishes the modalities of quality inspections of meals in public catering that shall be applicable to each lot of culinary products, bakery products and confectionary products with a view of sorting out poor quality food. Special food quality inspection composed of three persons shall be constituted for each trade outlet. Quality inspection shall be carried out in the presence of producer (cook, confectioner) before selling to the consumers. Organoleptic quality indicators shall comply with the established technical standards. Produce assessment shall be carried out in conformity with five-mark grading system by exterior view, colour, flavour, taste and consistency.
