Abstract
This Standard specifies the basic requirements and management rules to be satisfied for the places, facilities, and personnel involved in sanitation control operations in the stages of livestock and poultry acceptance, slaughter, segmentation, packaging, storage and transportation during the process of livestock and poultry slaughtering and processing.
Specific requirements for product traceability and recall management, for record and document management are also included in the Standard.
