Abstract
The ordinance on animal food monitoring regulates the official control of the production, treatment, and marketing of food of animal origin in Germany, ensuring compliance with EU regulations. It defines key terms such as food of animal origin, prohibited substances, and residues, and sets requirements for official veterinarians and qualified assistants involved in monitoring tasks. The ordinance mandates specific hygiene and safety measures during slaughter, especially for animals involved in zoonosis or disease eradication programs, including spatial and temporal separation of slaughter processes and thorough cleaning afterward. It also outlines procedures for official meat inspections, including testing for trichinae in wild game, and allows trained hunters to conduct certain tests under official supervision. Additionally, it requires regular health monitoring in farms producing small quantities of poultry or rabbit meat and sets conditions for official examinations of animals slaughtered for personal consumption. The ordinance aims to protect public health by preventing contamination and ensuring that animal-derived foods meet stringent safety standards before reaching consumers.
