Abstract
The present Guidelines, issued by the Danish Veterinary and Food Administration, are aimed at livestock owners and slaughterhouses as well as official veterinarians and on-duty veterinarians (in the meat inspection and in the veterinary section). They are concerned with food chain information, understood as information that must be sent with animals to be slaughtered for food. This includes: 1) rules on food chain information and the information slaughterhouse must have received before the animals may be slaughtered; 2) the food chain information to be provided when animals are sent for slaughter either directly from a farm or via a trader; 3) some of the methods to submit food chain information; and 4) the authorized veterinarian's control to ensure that the requirements concerning food chain information have been complied with. Animals may only be slaugthered if the relevant food chain information has been duly submitted.
The Guidelines contain the following chapters: 1. Introduction; 2. What food chain information shall be submited?; 3. Responsibilities of the livestock owner; 4. How is food chain information submitted?; 5. Responsibilities of slaughterhouses; 6. Slaughterhouse's briefing to the authorized veterinarian; and 7. Responsibilities of authorized veterinarians.
