Abstract
This Executive Order regulates Denmark’s vocational education and training programme for gourmet butchers, preparing students and apprentices to produce, display and sell gourmet butcher products and prepared meal solutions. The programme lasts between two years and six months and four years and three months and is divided into two stages: a level 3 gourmet butcher qualification followed by a level 4 specialisation in retail/delicatessen, pig and cattle butchery, or sausage making and meat processing. It sets admission requirements, required competencies and certificates, recognition of prior learning, school instruction and assessment arrangements, including written tests and journeyman’s examinations. The Order allows students who began under the previous rules to continue under them or transfer under applicable transitional arrangements.
