Abstract
This Executive Order regulates Denmark’s vocational education and training programme for butchers, preparing students and apprentices to slaughter, cut and debone meat using appropriate equipment and with knowledge of hygiene and quality control. The programme lasts between two years and six months and three years and six months and is divided into two stages: a level 3 butcher qualification and a level 4 specialisation as a pig slaughterer. It establishes admission requirements, required competencies and certificates, recognition of prior learning, school-based instruction and final examinations, including journeyman’s examinations and rules on minimum grades, resits and appeals. The Order allows students who began under the previous rules to continue under them or transfer under applicable transitional arrangements.
