Abstract
This regulation governs the classification, composition, naming, marketing and labelling of meat and meat products. Its main purpose is to ensure that consumers receive accurate and clear information about meat products offered for sale, advertised or otherwise presented. It defines key terms such as meat, offal, fresh meat, meat product and added ingredients, and divides meat products into categories including pure meat products, products with added water, mixed meat products, salted products, sausages, raw sausages and meat jellies. It sets rules on ingredient declarations, nutritional labelling, claims such as “low salt” or “reduced fat”, and the declaration of added water. It also establishes quality classifications and protected product names, for example for hamburgers, minced meat, "hangikjöt", "skinka" and traditional Icelandic offal products. Food businesses must keep internal control records proving compliance, while local health committees supervise enforcement under the oversight of the Environment Agency.
