Regulation No. 411/2004 on various contaminants in food.

This Regulation sets rules on various contaminants in food, defining contaminants as substances that enter or form in food and affect its properties, composition, quality or wholesomeness. It establishes that producers and importers are responsible for ensuring that food placed on the Icelandic market does not exceed the maximum contaminant levels listed in the annexes, while allowing the Environment Agency to permit temporary distribution in limited cases based on risk assessment. The regulation covers sampling and analytical procedures, official supervision by municipal health committees under the Environment Agency, and enforcement measures where food exceeds permitted contaminant limits or may pose a health risk. Its annexes set action limits and maximum levels for contaminants such as erucic acid, glycoalkaloids, histamine, nitrosamines, patulin, PCBs, PSP toxins, tetrachloroethylene, tin and certain radioactive substances across categories including oils, potatoes, fish, meat, baby food, drinks, shellfish and milk.
