Abstract
This regulation establishes rules in Iceland for the preparation, weighing, quality assessment, classification, and labelling of slaughter products (other than poultry) intended for the domestic market. It sets requirements for carcass trimming and hygiene before grading, weighing procedures, mandatory classification by species and quality, labelling and traceability information, the duties and training of official meat graders, dispute resolution over grading decisions, and specific simplified rules for small sheep and goat slaughterhouses. It also provides for enforcement and penalties under Icelandic slaughter and food laws.
