Abstract
This Regulation consisting of 29 articles establishes that (i) it is not permitted to slaughter and prepare livestock and poultry for the purpose of selling their meat except in the authorized abattoirs; (ii) slaughter is carried out under the supervision of the doctor or the competent inspector; (iii) the carcasses shall be prepared in accordance with the sanitary conditions that guarantee the prevention and spread of pollution; (iv) violence or cruelty may not be used unnecessarily in the treatment of cattle and poultry during transportation, seizure or slaughter in slaughterhouses; (v) livestock and poultry transport methods must be supported by approved standards; (vi) the animal has to be accompanied by a certificate from the competent veterinary authority; (vii) all slaughtered animals' meat must to be reserved for 24 hours, after which its validity for human consumption is determined by a technical committee; (viii) to practice the slaughter and processing of livestock and poultry is needed obtaining a license from the Municipality; (ix) to obtain the license, it is required a health card issued by the Municipality after submitting a health certificate from the Ministry of Health; (x) slaughtered meat prepared for sale shall not be removed unless it is stamped with the official seals and inks approved by the municipality for this purpose; (xi) meat may not be transferred from slaughterhouses to distribution outlets except in refrigerated transport vehicles that meet the approved standard specifications and sanitary conditions determined by the Municipality; and (xii) the employer shall provide the special clothing for the workers in accordance with the maintenance of the cleanliness of the uniform, hygiene and adherence to the rules of hygiene.
