Abstract
This Order approves the Lithuanian Hygiene Norm HN 15:2021, which establishes mandatory hygiene requirements applicable to food handling activities. It sets out general provisions concerning food hygiene and defines requirements for the production, preparation, processing, storage and transport of food. The Order applies to food business operators and to public authorities responsible for the supervision and control of food handling activities. The Ministry of Health is the primary authority responsible for the oversight and implementation of these hygiene standards.
The Norm requires food business operators to implement self-control systems based on the principles of Hazard Analysis and Critical Control Points (HACCP) or to apply rules of good hygiene practice. It establishes requirements relating to premises, equipment and utensils, as well as requirements aimed at preventing contamination. Provisions are also included on the health status and hygiene of personnel handling food.
The regulation further specifies conditions for temperature control during food processing, storage and transport, as well as requirements concerning water used in food handling, cleaning and disinfection procedures, and waste management. Additional provisions apply to public catering activities and retail food trade. The Order also includes specific rules governing the maritime transport of bulk raw sugar, including requirements for the cleaning and inspection of containers.
