Abstract
This Technical Regulation establishes the procedure for classifying carcasses, recording and reporting the market prices of carcasses and live animals, for the bovine species. The classification grid applies to cattle carcasses that are divided into the following categories: (a) V: cattle carcasses older than less than 8 months; (b) Z: carcasses of cattle aged between 8 months and less than 12 months; (c) A: carcasses of uncastrated males aged between 12 months and less than 24 months; (d) B: carcasses of uncastrated males aged at least 24 months and over; (e) C: carcasses of castrated males aged at least 12 months and over; (f) D: carcasses of females that have calved; and (g) E: carcasses of other female cattle aged at least 12 months and more. Slaughterhouses have the obligation to weigh individually, while hot, each half-carcasses of cattle, to keep a record of these weights and to hand the classifier, in the order of animal slaughter, the list of the hot weights of the half-carcasses, including the weights of the carcass portions resulting from excisions and/or veterinary sanitary seizures, so that they are correctly recorded in the classification report. Slaughterhouses must allocate and apply to the carcass, immediately after skinning, a slaughter number (sequential serial) according to the order of entry for cattle slaughter, in order to identify the carcasses individually and ensure traceability, according to the identification data in the certificate of origin. Slaughterhouses have the obligation to take measures to remove the causes that can influence the correctness of the weighing and the weight of the carcass, respectively: (a) check the weighing equipment, according to the metrological rules in force, having the obligation to request the performance of the periodic metrological check and to have the declaration of conformity of the scale and the bulletin of periodic metrological verification of the scale; (b) take measures for the immediate repair of the scale, in case of its incorrect operation, by an authorized body, and until it operates in normal parameters, use another scale that allows correctly determining the weight of the carcasses; and (c) correctly record the weight of the slaughterhouse hooks and are responsible for correctly subtracting their weight from the weight of the carcasses when weighing the carcasses. If the slaughterhouse has several constructive types of hooks, they will necessarily be sorted and used together.
