Abstract
These Rules establish veterinary and sanitary requirements for the acceptance, pre-slaughter inspection of animals (agricultural, domestic, wild, including domestic and wild birds), post-mortem inspections of carcasses and organs, veterinary and sanitary norms for quality and safety of meat and meat-based products, the procedure for conducting veterinary and sanitary examination, laboratory research, as well as the use of products to be disposed of. The requirements of the above-mentioned Rules apply to animals (poultry) which are subject to slaughter, as well as to meat, meat-based products and products intended for industrial use, animal feed, etc., for the preparation, manufacturing, processing, storage, transportation and trade thereof. These Rules are intended for state institutions of veterinary medicine of Ukraine, including specialists of veterinary medicine, authorized to carry out state veterinary and sanitary supervision and control over the activities of business entities related to slaughter of animals, processing, storage, transportation and trade of products of animal origin, veterinary units of ministries, other central executive bodies and their territorial bodies, etc., as well as for institutions and organizations of the state sanitary and epidemiological service. All species of slaughtered animals and poultry before slaughter are subject to veterinary inspection with selective or general thermometry (at the discretion of the veterinary specialist), and meat and other products of slaughtering, intended for human nutrition, animal feeding and further processing, must pass veterinary and sanitary examination. Prohibits to send to slaughterhouses animals which were treated with antibiotics and other VMPs before the end of waiting period prescribed by regulations (Art.4.7). All animals to be sent to slaughterhouses should be accompanied with information when they were treated with antibiotics last time (Art.4.9). Sets maximum residue limits for antibiotics and pesticides in meat. Trade and use of meat and other products of slaughtering of livestock (birds) that have not passed the veterinary and sanitary examination and obtained from animals that have not passed pre-slaughter inspection in the established manner is prohibited. Meat and meat-base products purchased abroad must comply with veterinary and sanitary rules, norms and requirements of safety and harmlessness criteria for human beings and animals, in accordance with the normative legal acts of Ukraine.
