Abstract
This Uganda Standard outlines the requirements for fortified maize flour, fortified whole maize meal, and fortified de-germed maize meal, all derived from the kernels of common maize (Zea mays L.) and intended for human consumption. It does not cover maize or maize products that are subject to other applicable standards. The text provides for the essential composition and quality factors on raw materials, general quality factors and essential factors. Fortified milled maize products shall contain the levels of vitamins and minerals specified in Table 3 for whole maize meal (high extraction) and in Table 4 for maize flour (low extraction) and degermed maize meal, throughout the entire shelf life of the product. The product shall comply with the maximum limits for heavy metals, pesticide residues, and mycotoxins as established by the Codex Alimentarius Commission. It must also be prepared and handled hygienically, ensuring it is free from harmful microorganisms, parasites, and microbial substances as specified in relevant standards. The text further provides for packaging and labeling, storage and transport, and methods of analysing. The Standards contains 12 Articles and has 2 Appendixes.
