Resolution No. 111 of 2001 issuing the regulation on sanitary requirements for food preparation industries and food shops.

This Regulation is composed of 6 Chapters divided into 116 articles: Terms and definitions (I); General provisions (II); General sanitary requirements (III); Particular sanitary requirements (IV); Offences and penalties (V); Conclusive provisions (VI).
General sanitary requirements are given for the following: air quality; illumination; water sources; sanitary equipments and facilities; waste disposal; chimneys, ovens and fireplaces; fire equipment; etc. Particular sanitary requirements are given for the following: restaurants, hotels and worker’s houses; dairy products; industry of pasteurized and sterilized milk; pools; coffeehouses and cafeterias; ice cream industries; storage of raw materials and packages; ice industries; mineral water industries; shops for sale, toasting, roasting and milling of edible nuts and coffee; pickled industries; ovens; laboratories for sweets; places for the repackaging of foodstuff; supermarkets and grocery stores; places for the sale of vegetables and fruit; butcher shops; places for the sale of live and slaughtered poultry; poultry breeding farms; potable water cisterns; wells and stations for potable water; etc.
