Food safety consists of measures designed to prevent consumers from foodborne illness, caused by microbiological hazards (such as Salmonella and BSE) and chemical hazards (such as natural toxicants or environmental contaminants such as mercury and lead), as well as food additives, pesticides and veterinary drugs.
