Abstract
These Rules have been drafted in accordance with the provisions of the Veterinary Act No. 922-IIQ and the standard of the Codex Alimentarius Committee on the Code of hygienic practice for meat (CAC/RCP 58-2005). These Rules establish veterinary and sanitary rules for slaughtering livestock animals and poultry in mobile, stationary and modular slaughterhouses in order to provide people with high-quality and safe foodstuffs of animal origin and to prevent zoonotic diseases.
These Rules lay down requirements for the structure, location, design and construction of slaughterhouses; the process of slaughter and primary processing; transport of slaughter animals; ante-mortem and post-mortem inspection systems; and storage and transportation of food products of animal origin. Veterinary documents for animals or poultry brought to slaughterhouses must reflect information on their health, diagnostic examinations and vaccinations, as well as information on the last use of antibiotics, hormones, antiparasitic and other veterinary drugs.
