Food (Seafood Processing and Inspection) Regulations, 2002 (Cap. 236).

These Regulations provide rules relative to the control of seafood intended for export, import and domestic wholesale trade. The Regulations shall not apply to fishing vessels on which freezing is carried out. “Seafood” is defined by these Regulations and shall not include marine mammals or birds. Inspection of seafood shall be carried out by authorized officers in accordance with these Regulations. The Regulations also set out requirements for the importation of seafood and the licensing of factory vessels, seafood holding stations, seafood processing plants and seafood export plants by the Minister and prescribes rules relative to the handling, packing and labelling of seafood. Persons handling seafood shall, among other things, carry out HACCP analysis. processors of seafood shall implement Sanitary Standard Operating Procedures (SSOP). The Schedules also set out microbiological limits for seafood.
