Abstract
These Veterinary and Sanitary Rules establish mandatory requirements for compliance by legal entities regarding the safety of work and services related to the production, storage, processing and movement of fish products. The organization engaged in the production of food fish products shall ensure the availability of: (a) plan for the placement of capital structures (buildings, structures), isolated premises and other objects belonging to business entities; (b) equipment installation diagrams; and (c) the route of movement of raw materials, food fish products, waste, workers. The organization ensures the implementation of a set of measures aimed at preventing the penetration, spread and reproduction of microorganisms, insects and rodents. Disinfection, disinsection and deratization are carried out by employees of the organization who have undergone appropriate training in disinfection, disinsection and deratization, or by other persons providing disinfection, disinsection and deratization work (services). Technological processes and equipment ensure the production of safe and high-quality alimentary fish products. Equipment, inventory and containers are made from materials approved for use in contact with food products and must be clean and labelled, indicating their intended use. The use of fish of the Canthigasteridae, Diodontidae, Molidae, and Tetraodontidae families for the production of alimentary fish products is prohibited. Each batch of fish entering production is accompanied by veterinary document. Materials used for packaging fish food products must be sufficiently strong, not impair the organoleptic properties of the alimentary fish products and be made from materials approved for use in contact with food products. Reuse of packaging containers is prohibited. Veterinary and Sanitary Rules for the keeping of snails and other mollusks and the production of food products from them establish mandatory requirements for compliance by legal entities regarding the safety of work and services related to the maintenance, cultivation, breeding, movement, production, procurement, storage and processing of snails and other mollusks, as well as food products obtained from them. Equipment, inventory, containers are: (a) made from materials approved for use in contact with food products; and (b) clean and labelled, indicating their intended use. All incoming raw materials meet the established food quality and safety requirements. Live snails and other mollusks are collected in clean, breathable fabric bags or in cellular (lattice) polymer boxes approved for use in the food industry. The use of dead snails and other mollusks for the production of meat and other food products is prohibited. Storage and transportation of food products is carried out in clean containers made from materials approved for use in contact with food products.
