Abstract
The technical regulation establishes maximum allowable levels for specific contaminants in food products to manage risks associated with substances resulting from production, processing, packaging, transport, or environmental exposure. It defines the scope of application for business operators and sets forth requirements for the handling, labeling, and placing on the market of food containing contaminants such as mycotoxins, heavy metals, environmental pollutants, and process-related chemicals. The document prohibits the chemical detoxification of contaminated food and the mixing of compliant products with those exceeding established thresholds for the purpose of dilution or market distribution.
The annexes provide detailed numerical limits for various food categories including cereals, fruits, nuts, meat, fish, milk, and beverages, with specialized stricter thresholds for infant formula and baby food. Specific contaminants regulated include aflatoxins, ochratoxin A, lead, cadmium, mercury, dioxins, and perchlorate among others. The regulation maintains requirements for business operators to provide documentation justifying the safety of their products and accounting for concentration changes during drying, dilution, or processing.
