Regulation on Edible Caseins and Caseinates.

This Regulation prescribes quality requirements within production and placing on the market must comply in edible caseins and caseinates group of products, and mixtures thereof, relating to: a) terms, definitions and general requirements that must be met; b) composition and sensory properties; c) type and quantity of raw materials and other substances used in production and processing; d) additional or specific labeling requirements; e) technological processes that can be used in production.
In terms of this Regulation, the following definitions shall apply: a) "caseins" means the principal protein of milk, washed and dried, insoluble in water and skim milk obtained from the following methods of deposition: the addition of acid, microbial acidification, rennet, using other enzymes for milk coagulation, with the possibility of prior use of ion exchange processes and procedures to concentrate; b) "caseinates" means products obtained by drying caseins treated with neutralizing agents;
Products defined in this Regulation shall be subjected to heat treatment, resulting in a negative reaction to the phosphatase test.
To determine product compliance with quality requirements prescribed by this Regulation, for the purpose of official controls, methods prescribed by special regulation, and other validated and internationally recognized methods will be used.
