Abstract
This Regulation lays down general hygiene rules for food business operators food, with particular taking into account the following principles: a) primary responsibility for food safety rests under entity in the food business; b) it is necessary to ensure food safety throughout the food chain, starting with primary production; c) food that cannot be stored safely at room temperature, particularly frozen foods, it is important to maintain the cold chain; d) general implementation of procedures based on the principles of Hazard Analysis and Critical Control Point (HACCP), together with the application of good hygiene practice, should reinforce the responsibility of business operators in the food sector; e) instructions and guides are valuable tools that operators in the food business at all levels of the food chain can use as help in enforcing the rules on food hygiene and the application of HACCP principles; f) it is necessary to establish microbiological criteria and requirements for monitoring the temperature, based on scientific risk assessment; g) it is necessary to ensure that imported food meets at least the same hygiene standard as food produced in the Croatian Republic, or an equivalent standard.
This Regulation shall apply to all stages of production, processing, distribution of food and to all exports, and without considering the requirements relating to food hygiene in accordance with special regulations.
