Abstract
This Regulation provides for all necessary standards and methods of sampling, preparation of samples, and analysis of the level of nitrates in foodstuffs for the correct performance of the official controls. Proper sampling and procedures for the preparation of samples are important for accurate determination of the amount of nitrates in food and foodstuff.
Official control shall be conducted in accordance with regulations on food. Sampling shall be performed by a person authorised by the special regulation laying down the implementation of official control. The laboratories conducting analyses for the purpose of official control within the meaning of this Regulation shall have to comply with the provisions laid down in the article 81 of the Food Law.
The Annex is an integral part of this Regulation.

This Regulation enters into force on 31 March 2009.
Notes
The Regulation transposes the provisions of Commission Regulation (EC) No 1882/2006 of 19 December 2006 laying down methods of sampling and analysis for the official control of the levels of nitrates in certain foodstuffs. The Regulation transposes the provisions of Regulation (EC) No 882/2004 of the European Parliament and of the Council of 29 April 2004 on official controls performed to ensure the verification of compliance with feed and food law, animal health and animal welfare rules.
