Abstract
Technical Regulation "Natural honey" establishes minimum requirements for food quality, safety, presentation and labelling that must be observed win the process of production and sale to the population of bee honey obtained from both domestic and imported products. The requirements of this Technical Regulation do not apply to honey produced in individual farms for their own consumption. Producers of natural honey are obliged to ensure the use of excellence, take effective measures to ensure quality, food safety, forms of presentation and labelling in accordance with the standards of Codex Alimentarius. The quality and food safety of honey presupposes compliance with the prescribed requirements, food hygiene throughout production process - from raw materials to the consumer. Quality and food safety must be obtained and monitored through product quality management systems and using methods that systematically identify potential risks and provide information that will allow identification of enterprise, production link, date of manufacture, batch of product, quality and quantity of the product. Good hygiene practices should be followed to avoid creating a favorable environment for diseases and pests. Natural honey intended for consumption by the population must meet the requirements for quality, food safety, composition, presentation, storage, transportation and consumer information, contained in this Technical Regulation.
