Abstract
Technical regulations "Natural honey" establishes minimum requirements for quality, food safety, presentation and labelling that must be complied with in the process of production and sale to the population of bee honey obtained from both domestic and imported products. The requirements of this technical regulation do not apply to honey produced in individual farms for their own consumption. Natural honey producers are obliged to ensure the use of advanced experience, take effective measures to ensure quality, food safety, presentation and labelling according to the standards of Codex Alimentarius. The quality and food safety of honey presupposes compliance with the prescribed requirements, food hygiene throughout the production process - from raw materials to the consumer. Quality and food safety must be obtained and monitored through product quality management systems and through methods that ensure the systematic identification of potential risks and provide information, which will make it possible to identify the enterprise, production link, date of manufacture, batch of the product, quality and quantity of the product. Honey producer must enter in the apiary's certificate records about the work on the maintenance and fight against diseases and pests, about the drugs used, which will allow to track the product and, if necessary, provide a documentary confirmation of compliance with quality and food safety requirements prescribed in this Technical Regulation.
