Abstract
These Regulations, as regards the territory of Gibraltar, are providing the complete set of food hygiene-sanitary requirements to be respected at various stages of food preparation or processing, storage, transport and trade, and intended for all types of food and foodstuff for human consumption, also with the aim of public health and direct food safety standards implementation. Object of these rules is general food hygiene approach and standards for all types of food and foodstuff.
This text is divided into X Parts and related thematic sub-sections. Titles of main part are as follows: Preliminary (I); General Requirements (II); Requirements relating to food handling (III); Requirements relating to food premises (IV); Ships (V); Requirements relating to stalls and vehicles (VI); Requirements relating to the transport and carrying of meat (VII); Requirements relating to docks, carrier etc. (VIII); Revoked in previous publications (Part IX); and Administrative provisions and penalties (X). Main subjects and topics elaborated in sub-sections are here listed: food business not to be carried on at insanitary premises; cleanliness of equipment; restriction on preparation and packing of food on domestic premises; food to be protected from risk of contamination; personal cleanliness and detailed food hygiene requirements; issues on possible infections in human subjects; food premises specific requirements (such as soil drainage systems; cisterns supplying water to food rooms; sanitary conveniences; water supply to be provided; wash-hand basins to be provided; first aid materials to be provided; various equipment standards; lighting and ventilation of food rooms); and particular food hygiene and sanitary issues for vessels or ships.
