Abstract
These Regulations are here setting the food safety rules as regards the processing and necessary heat treatment of food products defined and denominated as ice cream.
This text sets the definitions, processing, handling and market rules, direct requirements relating to manufacture of ice-cream (issues on pasteurization, sterilization, technical processing), requirements relating to sale of ice-cream, penalties, and other specific rules related to the food safety in ice cream products.
