Abstract
This Regulation hereby establishes the necessary general and special conditions of hygiene of food (microbiological criteria or value of effective contamination) at any stage of production, processing and transport.
This Regulation implements the principles provided by HACCP standards and also regulates the relation between food operators and related requirements.
The Annex is an integral part of this Regulation.
