Abstract
This Regulation sets out the requirements for the approval of establishments producing sprouts. The competent authorities in Member States shall approve such establishments only if these requirements are fully met. The requirements refer to good food hygiene practices, including protection against contamination between and during operations. In particular, surfaces (including surfaces of equipment) in areas where foods are handled and those in contact with food shall be maintained in a sound condition and be easy to clean and, where necessary, to disinfect.
