Abstract
This Regulation prescribes conditions and criteria for classification and grading of beef carcasses at slaughtering, methods and procedures of classification, grading and marking of meat, fixed marks, the conditions to be met by persons who perform the procedure of classification and evaluation and supervision of these affairs.
Meat is classified and based on age and physiological state into three basic groups: veal, young beef and beef.
The Croatian Livestock Centre (hereinafter referred to as HSC) is a legal entity based on the decision of the Ministry of Agriculture, Forestry and Water Management to organize and carry out verification procedures for classification and test quality of beef carcasses at slaughter.
HSC and slaughterhouses are obliged to conclude an agreement on the performance of classification.
The Annex is an integral part of this Regulation.

Entry into force notes
This Regulation enters into force eight days after its publication in the Official Gazette.
Notes
On the effective date of this Regulation, the Regulation on the quality of beef carcasses at slaughter (Official Gazette 20/04 and 10/05) will be no longer in force.
