Abstract
The Decree establishes general rules on food hygiene and the modalities for the verification of the compliance with said rules. The surveillance shall be exercised "in primis" within the factory and will cover the manufacturing, processing, packaging, storage, transport, distribution and sale of the products. The inspections to be carried out shall aim substantially at assessing potential hazards and at keeping the HACCP critical points under control. Additional checks shall be performed at national level according to the provisions of Legislative Decree of 3 March 1993, No. 123. Article 8 establishes the penalties to be inflicted in case of contravention. The Decree is followed by one Annex, on general hygiene requisites and one Appendix.
