Abstract
This Regulation prescribes the necessary microbiological criteria to be observed as regards the respect to the mandatory food safety issues, including additional hygiene procedures, food testing and sampling (microbiological criteria on the technical basis of absence/presence or number of microorganisms and/or the amount of their toxins/metabolites per unit of mass, volume, surface or series).
This text further sets the offences and necessary penalties.
This Regulation transposes the rules contained in the Commission Regulation (EC) No 2073/2005 of 15 November 2005 on microbiological criteria for foodstuff.
The Annex is an integral part of this Regulation.
